Two new ingredients from Cerestar have won recognition in the prestigious Food Processing Magazine Awards.
C*Cavitron Beta Cyclodextrin, designed as a flavour carrier in foods, was granted an Achievement Award. Cyclodextrins can be used to stabilise flavours during manufacture and storage, to protect sensitive substances against thermal decomposition, oxidation, light-induced degradation or loss by evaporation or sublimation. An enzyme modified starch, C*Cavitron allows direct admixture of powdered flavours. Its flavour complexes are virtually odourless compared with spray-dried counterparts and show remarkable storage stability and resistance to thermal desorption.
Cerestar's new polyol sweetener C*Eridex Erythritol also won an Achievement Award. Extremely digestible due to its small molecular size, C*Eridex can be used in a variety of products to impart reduced calorie, non-cariogenic sweetness, a cooling effect, and texture and bulk. It does not affect blood sugar levels and blends well with high-intensity sweeteners.
